Two gnocchi recipes you can’t miss!

Who wouldn’t want to gather a few ingredients and have a flavor packed dish ready in less than ten minutes? Cooking has just got easier with skillet gnocchi. Do you dare try them?

A classic potato gnocchi recipe might include boiling some water and cooking the gnocchi there, but skillet gnocchi have made the process much easier and just as yummy. You will end up having a crispy on the inside and soft on the inside gnocchi in under five minutes. Combine it with your favorite ingredients and you’ll become a fan! If you are not feeling so creative, here are some recipes you can follow using this cooking method.

Recipe 1: Skillet gnocchi and baked salmon

You will need:

  • 1 packet of skillet gnocchi.
  • 3 tbsp of extra virgin olive oil.l
  • 1 tbsp of lemon zest.
  • 2 tbsp of lemon juice.
  • Salt to taste.
  • Pepper to taste.
  • 6 salmon filets.
  • Basil leaves.
  • 1 lemon.
  • ½ cup of sun-dried tomatoes.
  • 6-8 cups of baby spinach.

Steps to follow:

  1. Start by preheating the oven at maximum degree.
  2. In the team, take a small bowl and pour two tablespoons of extra virgin olive oil and one tablespoon of lemon juice. Whisk everything and season everything with some salt and pepper. Set aside.
  3. Take a lemon and slice it into as many salmon filets you have. In this case, you’ll need six.
  4. Use half of the mix to brush the salmon filets, make sure they are boneless. Top the filets with some basil leaves and one lemon slice.
  5. Take the salmon to a roaster with some foil paper underneath and take it to the oven for ten minutes. After that time, turn them over and cook for two more minutes.
  6. As that cooks, take a skillet and preheat some olive oil in it. Place it over a medium heat and cook the gnocchi with the sun-dried tomatoes. Suaté for no longer than five minutes, making sure they are crispy.
  7. Add the baby spinach and stir continuously for two or three more minutes. Top everything with the rest of the lemon juice mix.
  8. Once the salmon and the gnocchi are ready, serve and enjoy!

Recipe 2: Lemon sauce gnocchi salad

You will need:

  • 4 tbsp of extra virgin olive oil.
  • 1 packet of cauliflower skillet gnocchi.
  • 8 cups of spinach or kale.
  • 1 ripe pear.
  • 1 red onion.
  • 2 tbsp of lemon juice.
  • 2 tbsp of maple syrup.
  • 1 tsp of Dijon mustard.
  • 1 clove of garlic.
  • Salt to taste.
  • Pepper to taste.
  • 2 tbsp of dried cranberries.

Steps to follow:

  1. Take a medium or large non-stick skillet and pour some olive oil in it. Place the skillet over medium heat and bring the cauliflower gnocchi. Sauté for no more than five minutes and make sure they are golden and crispy.
  2. Take a salad bowl and place the baby greens, the previously cubed ripe pear and the spinach or the kale. You can use both together.
  3. In a small bowl, prepare the sauce. Pour three tablespoons of lemon juice, two tablespoons of maple syrup, 1 teaspoon of mustard, salt and pepper to taste. Mince a clove of garlic and add it here. Whisk everything and integrate.
  4. Drizzle the mix all over the salad and add the gnocchi. Give everything a good stir.
  5. Top the salad with some dried cranberries and serve!
